Culinary General Manager (Responsible for 3 locations - Gahanna, Clintonville, Dublin.)
Pay: $60k - 75k DOE
About the role:
The Culinary General Manager is responsible for overseeing all daily kitchen operations across a group of locations throughout the Ohio area. Each location is relatively 10-15 miles apart from one another. You will be working with management on purchasing, inventory, customer service, food quality, food safety, and staffing. You will be ensuring company standards, as it relates to onboarding, training, managing food costs, budget and timelines for any objectives presented your way. This person will provide leadership and direction to all line staff within each kitchen as well as mentoring and guiding Kitchen Managers to do the same. You will ensure that all recipes, preparations, and presentations meet company specifications and quality with flawless execution.
Responsibilities
Supports and directs resources to assist Kitchen Managers (KMs) on day-to-day basis for different menu concepts/brands across multiple locations.
The Culinary General Manager (CGM) will be responsible for leading all operations, food safety and HACCP program compliance. Providing overall planning, direction, and execution in each assigned group of locations.
CGM will be responsible for all operations and the success of the business and it's business partners in their market
Execute to financial goals and defined business metrics
Bring forth creative ways and opportunities to drive top line sales, while managing to your budget and key point metrics
Collaborates and direct resources with KMs on all operational areas such as food procurement, production, service, inventory, ordering, storage and rotation, food preparation, recipes adherence, presentation and sanitation/cleanliness, and onboarding of food distributors
Validate and assess line checks with KMs and ensure all food product is prepped for the day meets the proper prep levels for food quality assurance
Collaborate with the Corp Chef, VP/Director of Operations, and Finance on expense tracking for accurate financial projections and with other department heads on bids, development and other related events.
Support management with Catering Proposals, Menu Pricing and Menu Innovation.
Track food costs while Managing Vendors to provide Standard Cost-efficient Products
Ensure that appropriate Maintenance and Safety Standards are followed and that kitchen team strictly adheres to state and federal regulations when it comes to food storage, handling and preparation and other safety and sanitation codes involving culinary utensils, kitchen equipment and overall cleanliness
Implement and maintain Culinary Excellence Standards.
Spend 90% of time on site divided roughly evenly across kitchens you are responsible for. Visit each site a minimum of once every week.
Requirements
Minimum 5 years of experience in an executive Kitchen position
Bilingual English / Spanish a plus
Demonstrated knowledge of Managing Multi-Unit Restaurants within a complex operation
Must have schedule flexibility including - days, nights, weekends, and some holidays
Strong organizational, communication, and project management skills are required
Ability to manage people above or below your level
Tolerance for a rapidly changingenvironment/missions
A team player with high EQ and collaborative approach to leadership
High intensity execution mindset, able to operate at urgency and pace
Promotes a healthy work environment with honesty, integrity, and respect for all employees
Proficiency in Google Suite (Sheets, Docs, and Slides)
